Preheat your oven to 375°F (190°C). Toast the bread slices in the oven for 10 minutes or until crisp and golden. c. In a small bowl, mash the avocados with garlic, salt, and pepper. Spread the mashed avocado evenly on top of each toast slice. d. Divide the cooked quinoa among the 6 slices of avocado toast, gently pressing it into the avocado layer. e. Top each slice with a generous spoonful of mango salsa and a few fried plantain slices.
