  • 8 large shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning (see recipe below)

  • 1/4 cup fresh parsley, chopped

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground celery seed

Instructions

  1. In a small bowl, combine all ingredients for the Cajun Seasoning. Mix well and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink and cooked through, about 3 4 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add spiralized zucchini noodles and cook for 3 4 minutes until slightly softened but still al dente.
  4. Stir in Cajun Seasoning to taste, making sure not to overseason. Add shrimp back into the skillet and cook for another 1 2 minutes until heated through.
  5. Gently toss in cherry tomatoes and fresh parsley. Season with salt and pepper to taste. Remove from heat and serve immediately.
