Ingredients

  • Ground Lamb (1 lb)
  • Zaatar Spice Mix (2 tbsp)
  • Salt (1 tsp)
  • Black Pepper (1/4 tsp)
  • Olive Oil (2 tbsp)
  • Fresh Parsley (1 cup, chopped)
  • Garlic (3 cloves, minced)
  • Cherry Tomatoes (1 pint)
  • Red Onion (1 small, thinly sliced)
  • Lemon (1, juiced)
  • Cucumber (1 medium, peeled and grated)
  • Greek Yogurt (1 cup)
  • Fresh Dill (2 tbsp, chopped)

Instructions

  1. a. In a large bowl, combine the ground lamb with zaatar spice mix, salt, black pepper, fresh parsley, and minced garlic. Mix well to incorporate all ingredients. b. Form the meat mixture into 1 inch diameter koftas (meatballs) using your hands or a cookie scoop. Set them on a tray lined with parchment paper. c. Heat olive oil in a large skillet over medium heat. Once hot, add the koftas and cook until browned on all sides and fully cooked through, approximately 8 10 minutes. Remove from skillet and set aside.

Chef’s Insight

The key to tender, juicy koftas is not overworking the meat during the mixing process. Gently mix the ingredients to ensure the perfect texture.

Notes

You can make your own zaatar spice mix or purchase it pre-made from a specialty store.
