Ingredients

  • 2 cups cooked jasmine rice, cooled (preferably a day old)
  • 1 block firm tofu, cut into cubes

  • 2 large eggs, beaten (optional)

  • 1 cup smooth peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tbsp lime juice
  • 1 tbsp palm sugar
  • 2 cloves garlic, minced
  • 1
  • inch piece of ginger, grated
  • Chili flakes, to taste (optional)

Instructions

  1. Heat 2 tablespoons of oil in a large skillet or wok over medium heat. Add the tofu and cook until golden brown on all sides. Remove from pan and set aside.
  2. In the same skillet, add another tablespoon of oil and stir fry the tempeh strips until crispy. Season with salt and pepper, then remove from pan and set aside.
  3. Add remaining oil to the skillet and sauté garlic and onions until fragrant and softened.
  4. Add the cooled rice to the skillet, breaking up any clumps. Stir fry for 2 minutes.
  5. Make a well in the center of the rice and pour the beaten eggs into the pan. Scramble until set, then mix the eggs with the rice.
  6. Add the cooked tofu and tempeh back into the skillet, along with the bean sprouts. Mix well and cook for another 2 minutes.
  7. In a separate bowl, whisk together all peanut sauce ingredients until smooth. Taste and adjust seasoning as needed.
  8. Drizzle the peanut sauce over the nasi goreng, mixing well to ensure every bite is coated in the rich flavor.
  9. Serve hot, garnished with fresh cilantro leaves and a sprinkle of crushed peanuts.
