  • 8 oz fresh Mahi
  • Mahi fillets
  • 1 cup gluten
  • free pineapple salsa
  • 1 lb gluten
  • free sweet potato gnocchi

  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prepare gluten free sweet potato gnocchi according to package instructions. Set aside.
  2. Season Mahi Mahi fillets with salt and pepper. In a large pan, heat olive oil over medium high heat. Sear Mahi Mahi for 4 minutes per side or until cooked through. Remove from pan and let rest.
  3. In the same pan, add 2 tbsp butter and sauté mixed vegetables until tender. Season with salt and pepper.
  4. Plate gnocchi in a mound on one side of the plate, Mahi Mahi fillet on top, and vegetable medley on the other side.
  5. Drizzle gluten free pineapple salsa over the Mahi Mahi and garnish with fresh cilantro. Serve with lemon wedges on the side.
