Preheat oven or grill to 350°F (175°C). Place pita bread on a baking sheet and brush with olive oil. Sprinkle za'atar seasoning evenly over the tops of each piece. Bake for 8 10 minutes, or until crispy and golden brown. When ready to serve, spoon ful medames onto individual plates, top with labneh cheese, cucumber slices, and mint leaves. Serve alongside za'atar manakish and lemon wedges.
