Prepare the fresh mango salsa by combining diced mangoes, red onion, lime juice, chopped cilantro, and a pinch of salt in a small bowl. Mix well and set aside to let flavors meld. d. When ready to serve, divide the chia pudding among four bowls or glasses. Top each with an equal portion of the fresh mango salsa. e. Garnish with additional lime zest and a sprig of fresh cilantro, if desired.
