Ingredients

  • 1 cup cooked Jasmine rice (for non

  • 2 cups Kimchi
  • 8 oz beef sirloin, thinly sliced
  • 2 tbsp soy sauce or coconut aminos (for Paleo)
  • 1 tbsp sugar (optional, for non
  • Paleo)
  • 2 cloves garlic, minced
  • 1 tbsp gochujang (Korean red pepper paste)
  • 1 tsp sesame oil
  • 1 green onion, thinly sliced
  • Salt and pepper, to taste

Instructions

  1. In a large pan, heat sesame oil over medium heat. Add garlic and cook until fragrant.
  2. Add beef sirloin and cook until browned. Season with salt and pepper.
  3. Stir in gochujang and sugar (if using). Cook for 1 2 minutes until the meat is well coated.
  4. Add soy sauce or coconut aminos, cook for another minute. Set aside.
  5. In a separate pan, warm up the Jasmine rice or cauliflower rice. Add kimchi and cook for 2 3 minutes until heated through. Season with salt and pepper if needed.
  6. Assemble the bento box: place kimchi fried rice at the bottom, followed by spicy bulgogi on top. Garnish with green onion slices.
