Ingredients
4 large eggs
1 cup fresh mixed herbs (parsley, cilantro, dill, and chives)
2 green onions, finely chopped
1/2 cup crushed walnuts
1/4 teaspoon saffron threads, soaked in 2 tablespoons of warm water
Salt and pepper, to taste
1 tablespoon olive oil
Instructions
In a large mixing bowl, beat the eggs until well combined.
Finely chop the mixed herbs and green onions. In a separate bowl, combine the herbs, green onions, walnuts, saffron (with its soaking water), salt, and pepper.
Add the herb mixture to the beaten eggs and mix well.
Preheat a non stick skillet over medium heat. Add olive oil and swirl to coat the pan evenly.
Pour the egg and herb mixture into the preheated skillet, spread it out in an even layer, and cook for 3 4 minutes until the bottom is set but the top remains slightly runny.
Carefully flip the omelette using a large spatula and cook for another 2 3 minutes, or until set and golden brown.
Remove from heat, let it rest for a minute, then gently slide onto a serving plate. Cut into wedges and serve immediately.
