Ingredients
4 large free
range eggs 2 cups fresh spinach 1 cup cherry tomatoes 1 cup mushrooms, sliced 1/2 cup avocado, sliced 1/2 cup prosciutto, thinly sliced 4 slices Paleo bread (e.g., almond flour or coconut flour) 2 tablespoons ghee or grass
fed butter Salt and pepper, to taste
Instructions
In a non stick skillet, melt the ghee or butter over medium heat.
Crack the eggs into the skillet and season with salt and pepper. Cook them sunny side up or to your desired preference.
In another non stick pan, cook the prosciutto until crispy. Remove from pan and set aside.
Add spinach to the same pan and cook for 1 2 minutes, or until wilted. Set aside.
In a separate pan, sauté the mushrooms until tender.
Toast the Paleo bread slices.
Assemble the breakfast by placing a slice of toast on each plate, topped with crispy prosciutto, spinach, mushrooms, avocado slices, and a perfectly cooked egg.
