Instructions

  1. Prepare the falafel bites: Drain and rinse the soaked chickpeas, then add them to a food processor along with the onion, garlic, parsley, and cilantro. Process until well combined and smooth. Transfer the mixture to a bowl and stir in almond flour, flaxseed meal, baking powder, salt, black pepper, cumin, paprika, and ground coriander. Mix well to combine. Form the mixture into small bite sized balls or patties and refrigerate for 30 minutes. Heat olive oil in a frying pan over medium heat. Fry the falafel bites until golden brown on all sides, then transfer them to a paper towel lined plate to drain excess oil. Prepare the tahini dip: In a small bowl, whisk together tahini paste, lemon juice, warm water, minced garlic, cumin, salt, and pepper until smooth and creamy. Adjust consistency with more water if needed. Assemble the veggie platter with carrots, cucumber, bell peppers, cherry tomatoes, celery, and radishes. Serve alongside falafel bites and tahini dip for a delicious Paleo friendly Israeli snack platter.
