Ingredients

  • 8 large Medjool dates, pitted and chopped 2 cups hot strong coffee (espresso or brewed) 1/2 cup Israeli date honey 1 1/2 cups heavy cream 1 teaspoon vanilla extract 24 ladyfingers (savoiardi) 1 tablespoon unsweetened cocoa powder Ground cinnamon, for garnish

Instructions

  1. In a bowl, combine chopped Medjool dates and hot coffee. Allow to steep for at least 30 minutes. In another bowl, whisk together Israeli date honey, heavy cream, and vanilla extract until soft peaks form. Dip each ladyfinger in the date infused coffee and layer them in the bottom of two serving glasses. Spoon half of the whipped date honey mixture over the soaked ladyfingers. Repeat with another layer of dipped ladyfingers and top with remaining whipped date honey mixture. In a small bowl, mix cocoa powder with a little water to create a thick paste. Transfer to a piping bag and pipe cocoa patterns on the surface of the dessert. Dust with ground cinnamon and serve immediately.

Chef’s Insight

Allow the ladyfingers to absorb the coffee flavor fully before assembling the dessert.

Notes

Use high-quality Israeli date honey for the best flavor.
