Ingredients

  • 1 cup cooked cauliflower rice 1 lb ground beef 2 tbsp olive oil 2 cloves garlic, minced 1 small onion, finely chopped 1 large egg 1/2 cup almond flour 1/2 tsp ground cinnamon 1/2 tsp ground allspice 1/4 tsp ground nutmeg Salt and black pepper, to taste 3 slices bacon 1 ripe avocado, halved and pitted 2 tbsp fresh lemon juice

Instructions

  1. Prepare cauliflower rice by pulsing a head of cauliflower in a food processor until it resembles rice grains. Set aside. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened, about 3 minutes. Add ground beef to the skillet and cook until browned, breaking up any clumps with a wooden spoon. Drain excess fat if necessary. In a separate bowl, whisk together egg, almond flour, cinnamon, allspice, nutmeg, salt, and black pepper. Pour this mixture into the skillet with the cooked beef, stirring well to combine. Cook for an additional 2 minutes, then remove from heat and let cool slightly. Divide cauliflower rice between two bowls or plates. Spoon the prepared Bobotie mixture on top of the cauliflower rice, making sure it's evenly distributed. In a non stick frying pan, cook bacon slices until crispy. Set aside. Cut avocado into thin slices and toss with lemon juice to prevent browning. Place atop each Bobotie mound. Arrange two bacon slices on the side of each bowl for garnish and added flavor.
