Ingredients

  • Mushroom Kielbasa 2 cups button mushrooms, chopped 1 cup vital wheat gluten 1/2 cup nutritional yeast 1/4 cup tomato paste 2 tbsp soy sauce 2 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp ground black pepper
  • Whole Grain Pierogi Dough 2 cups whole wheat flour 1/4 tsp salt 3/4 cup water 2 tbsp vegetable oil
  • Herbal Infused Vegetable Medley 1 lb fresh mixed vegetables (e.g., bell peppers, zucchini, carrots) 2 cups vegetable broth 1/4 cup chopped fresh herbs (e.g., dill, parsley, basil)
  • Optional toppings: vegan sour cream and fresh herbs for garnish

Instructions

  1. Prepare the Mushroom Kielbasa by combining all ingredients in a food processor until well combined. Form into sausages or patties and set aside. For the Whole Grain Pierogi Dough, mix together the flour and salt in a bowl. Slowly add water and vegetable oil, kneading until a smooth dough forms. Wrap in plastic wrap and refrigerate for 30 minutes. Roll out the dough on a floured surface, cutting into 2 inch circles. Add your choice of filling (e.g., mashed potatoes, sauerkraut, or mushroom duxelle) to half of the circles, then top with another circle and seal the edges. Boil pierogi in batches for 3 4 minutes until they float to the surface. To prepare the Herbal Infused Vegetable Medley, heat vegetable broth in a large skillet, add vegetables and cook until tender. Stir in fresh herbs and season to taste. Sauté the Mushroom Kielbasa in a non stick pan until golden brown. To plate, arrange pierogi and kielbasa on a warm plate, garnishing with additional fresh herbs if desired. Serve alongside the Herbal Infused Vegetable Medley for a complete meal.
