1. 2 cups almond flour 2. 1/2 cup coconut flour 3. 1/2 teaspoon baking soda 4. 1/4 teaspoon salt 5. 1/2 cup coconut oil, melted 6. 1/4 cup honey 7. 1 large egg 8. 1 tablespoon vanilla extract 9. 1/2 cup dulce de leche (homemade or store
bought)
Instructions
In a large bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
In another bowl, combine the melted coconut oil, honey, egg, and vanilla extract. Mix well.
Gradually add the wet ingredients to the dry ingredients, mixing until a smooth dough forms.
Divide the dough in half, forming two discs. Wrap each in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Roll out one disc of dough between two sheets of parchment paper, about 1/8 inch thick. Cut into circles using a cookie cutter or glass. Repeat with the second disc.
Place the circles onto the prepared baking sheet and bake for 8 10 minutes, or until golden brown. Allow to cool completely on a wire rack.
To assemble, spread a thin layer of dulce de leche on one side of each cookie and then gently press another cookie on top to form a sandwich.
