  4. Thread each ear of corn onto a wooden skewer, piercing through the base and allowing some corn to hang off the end.
  5. Grill the corn skewers for 10 12 minutes, turning occasionally, until the corn is tender and slightly charred. Remove from heat and let cool for a minute.
  6. Sprinkle each corn skewer generously with the cheese mixture, then drizzle with the spicy mayo.
  7. Garnish with additional cilantro and serve immediately.
