Ingredients
4 oz. feta cheese
1 cup raw almonds
3 tbsp. honey
2 tbsp. fresh lemon juice
2 tsp. grated lemon zest
2 tbsp. coconut flour
2 tbsp. extra virgin olive oil
A pinch of salt
Instructions
Preheat oven to 350°F (175°C).
In a medium bowl, mix the almonds, coconut flour, and a pinch of salt. Add olive oil and rub until well combined. Set aside.
In another small bowl, combine honey, lemon juice, and lemon zest. Stir until fully incorporated.
Cut the feta cheese into two equal portions. Arrange them on a baking sheet lined with parchment paper.
Bake the feta for 7 minutes in the preheated oven.
Remove from the oven, and evenly spoon the lemon honey sauce over the feta portions.
Sprinkle the almond crumble mixture over the baked feta and sauce.
Return to the oven and bake for an additional 5 7 minutes or until the almond crumble is golden brown.
Remove from the oven and let it rest for a few minutes before serving.
