4.5 oz boneless, skinless free
range chicken breast 2 cups cauliflower rice 1 medium tomato, chopped 2 cloves garlic, minced 3 tbsp coconut oil 1/2 avocado, sliced 2 tbsp fresh basil leaves, chopped Salt and pepper, to taste
Instructions
In a large pan, heat 2 tablespoons of coconut oil over medium high heat. Season the chicken breast with salt and pepper, then add it to the pan. Cook for 6 7 minutes per side or until cooked through. Remove from pan and let rest for 5 minutes before slicing into thin strips.
In the same pan, add another tablespoon of coconut oil, garlic, and tomato. Sauté for 3 4 minutes until softened.
Add cauliflower rice to the pan and cook for about 5 7 minutes or until tender. Season with salt and pepper to taste.
Plate the cauliflower rice, top with crispy chicken strips, creamy avocado slices, and fresh basil leaves.
