  1. Begin by preheating your oven to 350°F (175°C). In a large mixing bowl, whisk together the soy milk and sunflower oil. Gradually add in the flour, white sugar, brown sugar, custard powder, and bicarbonate of soda, stirring until well combined. Add apple cider vinegar and mix. Pour the batter into a greased baking dish and bake for 30 minutes or until golden brown. In the meantime, prepare the syrup by melting vegan butter in a saucepan, adding brown sugar, and stirring until dissolved. Stir in hot water and bring to a boil, then remove from heat. Once the pudding is done, immediately pour the warm syrup over it. Let the pudding sit for 10 minutes before turning it out onto a serving plate.
