Ingredients
1 lb fresh sea scallops 2 oz white wine vinegar 2 oz lemon juice 2 oz lime juice 1 cup diced red bell pepper 1 cup diced green bell pepper 1/2 cup diced red onion 1/4 cup chopped cilantro 1/4 cup chopped parsley 1/4 cup chopped mint leaves Salt and pepper to taste Extra virgin olive oil
Instructions
In a non reactive bowl, combine white wine vinegar, lemon juice, lime juice, and a pinch of salt. Slice the scallops into thin disks and add them to the citrus marinade. Cover and refrigerate for 2 hours. In another bowl, mix diced red and green bell peppers, red onion, and chopped herbs. After the scallops have marinated, remove from the fridge and drain off any excess liquid. Toss the scallops in the vegetable mixture and drizzle with extra virgin olive oil. Season with salt and pepper to taste.
