Instructions

  1. In a large, shallow pan or paella pan, heat olive oil over medium heat. Add diced red bell pepper and cook until softened, about 5 minutes.
  2. Stir in grated tomatoes and saffron threads. Cook for another 3 4 minutes to release the flavors of the spices.
  3. Add gluten free Arroz and cook, stirring continuously, for 1 minute. Pour in the fish or seafood broth and white wine (if using). Season with salt and black pepper.
  4. Bring the mixture to a boil, then lower the heat to simmer. Cook uncovered for about 12 15 minutes until the Arroz has absorbed most of the liquid.
  5. Layered on top of the Arroz, place the shrimp and mussels evenly over the dish. Cover with aluminum foil or a lid and cook for another 8 10 minutes until the seafood is cooked through.
  6. Remove from heat and let it rest for 5 minutes to allow the steam to finish cooking the mussels. Sprinkle with fresh parsley, lemon zest, and juice before serving.
