  • sized ripe plantains 2 large red bell peppers 1 cup roasted peanuts 1 onion, finely chopped 3 cloves garlic, minced 1 tablespoon grated ginger 1 can (14.5 oz) diced tomatoes 2 cups vegetable broth 1/4 cup tomato paste 1 teaspoon ground cumin 1 teaspoon ground coriander Salt and pepper, to taste Olive oil, for cooking Fresh cilantro, chopped (for garnish) Steamed white rice, for serving

Instructions

  1. Prepare the grilled plantains by peeling them and cutting into 1 inch thick slices. Heat a grill or grill pan over medium heat and cook the plantain slices until they are slightly charred and tender, about 3 minutes per side. Set aside.
  2. For the spiced red pepper stew, roast the red bell peppers on an open flame or in an oven until charred. Place them in a bowl, cover with plastic wrap, and let cool. Once cooled, remove the skin, seeds, and stem, then chop into bite sized pieces.
  3. In a large pot over medium heat, add 1 tablespoon of olive oil. Sauté the onion, garlic, and ginger until translucent. Add the chopped red bell peppers, diced tomatoes, tomato paste, ground cumin, and ground coriander. Stir well to combine and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes, or until the sauce thickens slightly.
  5. In a blender or food processor, blend half of the peanuts into a smooth paste. Stir this peanut paste into the simmering red pepper stew and continue cooking for another 5 minutes to allow flavors to meld. Season with salt and pepper as needed.
  6. For the peanut soup, blend the remaining peanuts with enough water to create a smooth consistency. Set aside.
  7. To plate, place a bed of steamed white rice on each plate, followed by a generous scoop of the peanut soup. Arrange the grilled plantains around the rice and stew, garnishing with chopped cilantro for a touch of color and freshness.
