Ingredients
Vegan Haggis (1 cup)
Vegetarian Black Pudding (1 cup)
Vegan Sausages (4)
Grilled Portobello Mushrooms (2 large)
Baked Beans (1 cup)
Toasted Whole Wheat Bread (2 slices)
Fresh Avocado (1, sliced)
Tomatoes (2, sliced)
Vegan Cheddar Cheese (4 slices)
Vegetable Oil (for frying)
Salt and Pepper (to taste)
Instructions
Heat oil in a pan over medium heat. Fry the vegan sausages until golden brown, about 5 minutes on each side. Set aside.
In the same pan, cook the grilled Portobello mushrooms for 3 4 minutes on each side, then set aside.
Toast the whole wheat bread slices and spread a generous layer of baked beans on each.
Assemble your vegetarian Scottish breakfast by placing the vegan haggis, vegetarian black pudding, fried sausages, grilled mushrooms, avocado slices, tomatoes, and cheese on top of the toasted bread with baked beans. Season with salt and pepper to taste.
