  • 2 cups young green jackfruit, drained and rinsed
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon black pepper, ground
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons cooking oil

Instructions

  1. In a large pan or wok, heat the cooking oil over medium heat.
  2. Sauté the garlic and ginger until fragrant, about 1 minute.
  3. Add the jackfruit, soy sauce, apple cider vinegar, sugar, black pepper, and cayenne pepper (if using) to the pan. Mix well and cook for 10 12 minutes, stirring occasionally.
  4. Pour in the coconut milk and continue cooking for another 8 10 minutes until the sauce has thickened. Stir occasionally to prevent sticking.
  5. Remove from heat and allow to cool slightly before serving.
