  • 4 large eggs
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled German pork sausage
  • 1/2 cup shredded Swiss cheese
  • 8 asparagus spears, trimmed and woody ends removed
  • 8 slices of thick

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together eggs, salt, and pepper. Set aside.
  3. Heat a 10 inch nonstick skillet over medium heat. Add spinach and sauté until wilted.
  4. Add crumbled pork sausage to the skillet with the spinach and cook for about 2 minutes, stirring occasionally.
  5. Remove the skillet from heat and pour in the egg mixture. Gently mix the ingredients together. Sprinkle Swiss cheese evenly over the top.
  6. Place the skillet in the preheated oven and bake for 18 20 minutes or until the frittata is set and the edges are slightly golden.
  7. Meanwhile, wrap each asparagus spear with a slice of bacon and secure with a toothpick.
  8. Place the wrapped asparagus on a baking sheet and bake in the oven for 15 20 minutes or until the bacon is crispy and the asparagus is tender.
  9. Remove both the frittata and asparagus from the oven, discard toothpicks, and slice the frittata into two servings.
