  • 2 large pineapples
  • 1 cup sugar
  • 4 tbsp butter
  • 1/4 cup water
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup all
  • purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 3 tbsp unsalted butter, melted
  • Whipped cream and fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Finely chop the pistachios and set aside.
  3. In a large bowl, mix together flour, brown sugar, salt, cinnamon, nutmeg, and chopped pistachios. Add melted butter and mix until the mixture forms coarse crumbs. Press half of this mixture into the bottom of an 8 inch square baking dish.
  4. Slice pineapples lengthwise, removing skin, core, and any fibrous parts. Cut slices into 1/2 inch thick wedges and set aside.
  5. In a saucepan over medium heat, combine sugar, butter, and water. Stir until the sugar dissolves, then stop stirring and allow it to boil undisturbed until it turns golden brown, about 7 9 minutes. Carefully add the pineapple wedges and cook for another 2 3 minutes, turning them occasionally until they are evenly coated with caramel.
  6. Arrange caramelized pineapple slices on top of the crust in the baking dish, then sprinkle remaining pistachio mixture over the pineapples.
  7. Bake for 25 30 minutes or until the crust is golden brown and the filling is bubbling. Remove from oven and allow to cool slightly before serving.
  8. Serve warm with a dollop of whipped cream and fresh mint leaves as garnish.
