Greek Paleo Dinner Feast: Grilled Lemon Herb Chicken with Roasted Vegetables and Tzatziki Sauce

Ingredients
2 boneless, skinless chicken breasts
1/4 cup olive oil
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
2 cups cherry tomatoes
1 large zucchini, sliced
1 large yellow squash, sliced
1 red bell pepper, chopped
1 small red onion, sliced
2 cups baby spinach
1 cup plain Greek yogurt
1/2 cucumber, seeded and finely chopped
2 cloves garlic, minced
1 tablespoon fresh lemon juice
Salt and pepper, to taste
Instructions
In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried basil, salt, and pepper. Reserve half of the marinade for vegetables.
Add chicken breasts to the bowl with remaining marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes or up to overnight.
Preheat oven to 400°F (200°C). Toss together cherry tomatoes, zucchini, yellow squash, red bell pepper, and sliced red onion in a large bowl with reserved marinade. Spread vegetables evenly on a large baking sheet lined with parchment paper.
Roast vegetables for 20 25 minutes or until tender and slightly browned, stirring halfway through. Add baby spinach during the last 3 minutes of roasting to wilt.
In another bowl, combine Greek yogurt, chopped cucumber, minced garlic, lemon juice, salt, and pepper to make the tzatziki sauce. Cover and refrigerate until ready to serve.
Grill or pan fry chicken breasts for 6 8 minutes per side or until cooked through. Allow to rest for a few minutes before slicing.
Plate chicken, roasted vegetables, and tzatziki sauce, garnishing with additional herbs if desired.
