Instructions

  1. Prepare the chicken by patting it dry and seasoning both sides with salt, black pepper, cumin, smoked paprika, ground coriander, and cayenne pepper to taste. Let the chicken rest for 10 minutes to allow the flavors to penetrate.
  2. Preheat your grill or oven broiler to medium high heat, and set an oven rack about 6 inches away from the heat source.
  3. Grill or broil the chicken on one side for 5 minutes, then flip and cook until done, approximately 10 12 more minutes. Remove from heat and let rest for 5 minutes before slicing.
