Instructions
Preheat oven to 400°F (205°C). In a large bowl, toss diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 30 35 minutes or until golden brown, stirring occasionally.
While the potatoes are roasting, whisk together eggs and almond milk in a medium bowl. Season with salt and pepper. Set aside.
In a large skillet, sauté onion and bell pepper over medium heat until softened. Add chopped spinach and cook until wilted. Remove from heat.
Stir the cooked vegetables into the egg mixture along with cherry tomatoes, parsley, chives, and dill. Allow the mixture to rest for a few minutes, allowing the herbs to infuse the eggs.
In another non stick skillet or oven safe pan, pour the egg mixture and cook over low medium heat until the edges begin to set but the center is still runny. Transfer the pan to the preheated oven and bake for 10 12 minutes or until the omelette is firm and golden brown. If using feta cheese, sprinkle it on top of the omelette before baking.
Remove the roasted potatoes from the oven and serve alongside the herb infused omelette. Garnish with additional herbs if desired.
