  • 2 cans young green jackfruit in water, drained and rinsed 1/4 cup Caribbean jerk seasoning 1/4 cup orange juice 1/4 cup coconut aminos or soy sauce 1 tablespoon tomato paste 1 tablespoon lime juice 1 teaspoon apple cider vinegar Salt and pepper, to taste 8 small corn tortillas 1/2 cup shredded lettuce 1/2 cup diced tomato 1/2 cup sliced avocado 1/4 cup vegan cheese, crumbled or shredded 1/4 cup chopped cilantro 1/4 cup hot sauce, to taste (optional)

Instructions

  1. In a medium bowl, combine the jackfruit, jerk seasoning, orange juice, coconut aminos or soy sauce, tomato paste, lime juice, apple cider vinegar, salt, and pepper. Mix well and let marinate for at least 30 minutes to develop flavor. Preheat a skillet over medium heat. Add the jackfruit mixture and cook until heated through and slightly caramelized, about 10 12 minutes. Remove from heat and set aside. Warm the corn tortillas in a dry pan or steamed to prevent them from breaking. Keep them covered with a damp towel to keep them warm. Assemble tacos by placing a generous portion of jackfruit mixture on each tortilla, followed by lettuce, tomato, avocado, vegan cheese, and cilantro. Drizzle hot sauce over the top, if desired.
