Ingredients

  • 4 cups shredded khoya (condensed milk)
  • 1 cup shredded mozzarella cheese
  • 2 cups gluten
  • free phyllo dough sheets
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon rosewater
  • 1 tablespoon orange blossom water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9 inch square baking dish with butter.
  2. In a large bowl, mix together the shredded khoya and mozzarella cheese until well combined.
  3. Lay half of the phyllo dough sheets flat in the prepared baking dish, overlapping them slightly to cover the bottom evenly. Brush with melted butter.
  4. Spread the khoya cheese mixture over the buttered phyllo layer.
  5. Place the remaining phyllo dough sheets on top of the cheese mixture, brushing each layer with melted butter as you go.
  6. In a small saucepan, combine sugar, water, rosewater, orange blossom water, ground cinnamon, and cardamom. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Set aside.
  7. Bake the dessert in the preheated oven for 30 35 minutes, or until the top layer of phyllo dough is golden brown and crispy.
  8. Remove from the oven and immediately pour the warm syrup over the hot dessert. Let it sit for a few minutes to absorb the flavors.
  9. Cut into squares and serve immediately, garnishing with a sprinkle of ground cinnamon if desired.
