1 lb chicken breast, thinly sliced 1 large onion, thinly sliced 2 bell peppers, thinly sliced 8 fajita
sized tortillas 2 tbsp vegetable oil Salt and pepper, to taste Fajita seasoning mix 1 cup long grain rice 2 cups water or chicken broth 1/2 cup chopped cilantro 2 limes, zested and juiced Optional: Sour cream, avocado slices, shredded cheese, and hot sauce for serving
Instructions
a. In a large pan or skillet, heat the oil over medium high heat. Add chicken and season with salt, pepper, and fajita seasoning mix. Cook until golden brown and cooked through. Remove from pan and set aside. b. In the same pan, add onion and bell peppers cook until tender. Season with salt and pepper to taste. Return the cooked chicken to the pan and stir well. c. For the cilantro lime rice, combine long grain rice, water or chicken broth, salt, lime zest, and half of the lime juice in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and cook for about 18 minutes or until the rice is tender and has absorbed all the liquid. Stir in chopped cilantro and remaining lime juice. d. To assemble, warm tortillas in the microwave or on a dry pan. Place a scoop of cooked chicken fajita mixture and a spoonful of cilantro lime rice onto each tortilla. Add your favorite toppings, if desired. Fold in half and serve immediately.
