  • 100g gluten
  • free brioche bread
  • 250g smoked salmon
  • 5 large free
  • range eggs
  • 100ml crème fraîche
  • 40g unsalted butter
  • 2 tbsp capers
  • Freshly ground black pepper, to taste
  • Fresh chives and dill, finely chopped, for garnish
  • 50g Edam cheese, grated

Instructions

  1. Preheat your oven to 180°C (360°F). Slice the gluten free brioche bread into 1cm thick slices and arrange them on a baking sheet. Bake for 5 minutes until golden brown. In a non stick pan, melt 20g of butter over medium heat. Add the smoked salmon and cook for 3 4 minutes until warm. In a separate bowl, whisk together the eggs, crème fraîche, and remaining butter. Season with freshly ground black pepper to taste. In another non stick pan, pour in the egg mixture and cook over low heat until set but still slightly runny. Place the cooked brioche slices on a serving platter. Top each with a generous portion of smoked salmon and the warm egg mixture. Garnish with capers, fresh chives, and dill, and sprinkle grated Edam cheese on top. Serve immediately.
