  • 1 tbsp chopped fresh chives
  • 1 tbsp black caviar (or substitute with red caviar)

Instructions

  1. In a large bowl, whisk together the gluten free flour, milk, eggs, sugar, vanilla extract, and salt until smooth. Stir in the melted butter. Cover and refrigerate for at least 30 minutes to rest.
  2. Preheat a non stick skillet or griddle over medium heat. Lightly grease with cooking spray or oil.
  3. Pour 1/4 cup of batter per blini onto the heated skillet, cook until bubbles form and edges are golden brown, then flip and cook the other side for an additional 2 minutes. Repeat until all the batter is used. Keep blini warm in a single layer on a baking sheet in the oven at 150°F (65°C).
  4. In a small bowl, combine crème fraîche, lemon juice, and half of the chives. Season with salt and pepper to taste.
  5. To assemble, spread a thin layer of caviar sauce on each blini, top with a slice of smoked salmon, then sprinkle with black or red caviar and remaining chives.
