Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 inch round cake pan.
  2. In a medium bowl, cover the pitted dates with boiling water and let them soak for 10 minutes. Then, drain and chop them roughly.
  3. In another large bowl, whisk together oat flour, all purpose flour, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. Add the chopped dates to the dry ingredients and stir until well combined.
  5. In a separate bowl, mix together dairy free milk, melted dairy free butter, apple cider vinegar, and vanilla extract. Pour this mixture into the flour and date mixture, stirring gently until just combined.
  6. Pour the batter into your prepared cake pan and bake for 30 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the toffee sauce by melting dairy free butter in a saucepan over medium heat. Add brown sugar, stirring constantly until dissolved. Then, add dairy free milk and vanilla extract, cooking for another 2 minutes before removing from heat.
  8. Once the cake is done baking, allow it to cool slightly, then poke holes all over the top with a fork or skewer. Pour the warm toffee sauce generously over the top of the cake, allowing it to soak in.
  9. Serve warm with a scoop of dairy free ice cream for the ultimate vegan dessert experience!
