Instructions

  1. In a large mixing bowl, combine the olive oil, salt, pepper, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), and ground coriander to create the spice blend. Rub this mixture onto both sides of the chicken breasts.
  2. Preheat a grill or grill pan to medium high heat. Grill the seasoned chicken breasts for 6 7 minutes per side, or until fully cooked through. Remove from heat and let rest for 5 minutes before slicing into strips.
  3. Warm the flour tortilla in a dry skillet over medium heat for about 15 seconds on each side. Set aside.
  4. Assemble your burrito bowl by placing a bed of shredded lettuce at the bottom of the tortilla, followed by black beans, grilled chicken strips, corn kernels, cherry tomatoes, avocado, and crumbled queso fresco. Finish with a sprinkle of cilantro leaves.
