  • 1. 2 cups Bamboo shoots, thinly sliced 2. 1 cup Enoki mushrooms, cleaned 3. 1 cup Napa cabbage, finely shredded 4. 1 cup Shiitake mushrooms, stemmed and sliced 5. 1 cup Tofu, firm or extra
  • firm, diced 6. 2 cups Vegetarian Chinese sausage, diced 7. 2 tbsp Soy sauce 8. 2 tbsp Oyster sauce 9. 1 tbsp Sugar 10. 1 tbsp Cornstarch 11. 1 cup Water, for stir
  • frying 12. 2 tbsp Vegetable oil 13. Salt and pepper, to taste

Instructions

  1. In a large bowl, combine bamboo shoots, enoki mushrooms, napa cabbage, shiitake mushrooms, tofu, vegetarian Chinese sausage, soy sauce, oyster sauce, sugar, cornstarch, and water. Toss well to coat everything evenly.
  2. In a large wok or pan, heat the vegetable oil over high heat. Once hot, add the mixed ingredients and stir fry until the vegetables are tender yet still crisp. Season with salt and pepper to taste.
  3. Serve immediately, garnishing with fresh green onions and cilantro.
