Ingredients

  • 1 (4
  • 6 lb) bone
  • in turkey breast, skin
  • on
  • Salt and pepper, to taste
  • 3 tbsp unsalted butter, softened
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh sage, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 6 tbsp unsalted butter
  • 1/4 cup all
  • purpose flour
  • 2 cups chicken or turkey broth
  • 1/2 cup white wine (optional)
  • Fresh herbs for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Remove the turkey breast from the package and pat dry with paper towels. Season the outside of the turkey breast generously with salt and pepper. Set aside.
  2. In a small bowl, combine the softened butter with parsley, sage, rosemary, thyme, shallot, and garlic to create your herb mixture.
  3. Carefully loosen the skin of the turkey breast by gently sliding your fingers under the skin and separating it from the meat. Spread half of the herb mixture evenly under the skin, pressing gently so that the flavors are well incorporated. Rub the remaining herb mixture on the outside of the turkey breast.
  4. Place the stuffed turkey breast on a wire rack set in a roasting pan. Roast for 1 hour and 30 minutes to 2 hours, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C). If needed, cover loosely with aluminum foil to prevent over browning.
  5. While the turkey breast is roasting, prepare the brown butter sauce. In a small saucepan, melt 6 tablespoons of unsalted butter over medium heat. Cook until the butter starts to turn golden brown and has a nutty aroma. Be cautious not to burn the butter.
  6. Remove the saucepan from the heat and carefully whisk in the flour. Gradually add the chicken or turkey broth, whisking constantly to prevent lumps. If using white wine, add it next, stirring until well combined.
  7. Bring the sauce to a simmer over medium high heat, stirring frequently. Cook until the sauce has thickened, about 5 minutes. Season with salt and pepper to taste. Set aside and keep warm.
  8. Once the turkey breast is done, transfer it to a cutting board and let it rest for 10 minutes before carving. Serve alongside the warm brown butter herb sauce. Garnish with fresh herbs and enjoy your nostalgic and cinematic holiday feast!
