Ingredients

  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 5 large eggs, room temperature
  • 2 1/2 cups all
  • purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup milk, room temperature
  • 1 tbsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 16 oz mascarpone cheese, softened
  • 1/4 cup heavy cream
  • 1/4 cup confectioner's sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9 inch round cake pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Gradually add the eggs, one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. In another small bowl, combine the milk and vanilla extract.
  4. Alternate adding the dry ingredients and milk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. In a large bowl, combine the mascarpone cheese and heavy cream. Using an electric mixer, beat on medium speed until smooth and fluffy.
  7. Once the cake has cooled, place it on a serving plate. Spread the mascarpone cream evenly over the top of the cake. Dust with confectioner's sugar using a fine mesh sieve to create a snowy effect.
