Instructions

  1. In a large mixing bowl, whisk together the flour, salt, and granulated sugar.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, mixing just until the dough comes together. Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  4. In a separate bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  5. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.

  8. Cut three small slits in the top of each pie for ventilation. Brush the tops with the remaining beaten egg and sprinkle with coarse sugar.
  9. Transfer the pies to the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake for 22 25 minutes, or until the crust is golden brown and the apple filling is bubbling. Cool on wire racks for at least 10 minutes before serving.
