Ingredients
- 1 baguette or French bread loaf, sliced into 1/2
- inch thick pieces
- 3 cups fresh or frozen cranberries, rinsed and picked over
- 1 cup granulated sugar
- Zest and juice of 1 large orange
- 1/4 cup balsamic vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- Freshly ground black pepper, to taste
- 1/4 cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 375°F (190°C). Arrange bread slices in a single layer on two large baking sheets. Bake for 8 10 minutes, or until lightly golden and crisp, turning the slices once during baking. Remove from oven and set aside to cool.
- In a medium saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, nutmeg, cloves, and a pinch of black pepper. Cook over medium heat, stirring occasionally, until the cranberries begin to soften and burst, about 5 7 minutes.
- In a small bowl, whisk together cornstarch and water until smooth. Stir this mixture into the cranberry mixture, and continue to cook until the compote has thickened, another 2 3 minutes. Remove from heat and set aside to cool slightly.
- In a separate small saucepan, bring balsamic vinegar to a boil over medium heat. Reduce heat and simmer until reduced by half, about 5 7 minutes. Remove from heat and set aside to cool slightly.
