Ingredients

  • 1 1/2 cups all
  • purpose flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg, separated
  • 2 large apples (preferably Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons heavy cream, for brushing
  • Coarse sugar, for sprinkling

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, 1 teaspoon of cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  2. Stir the egg yolk in a small bowl and pour it into the dough mixture. Mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. While the dough is chilling, core and thinly slice the apples. In a separate bowl, combine the brown sugar, 1 tablespoon of cinnamon, ginger, nutmeg, lemon juice, and cornstarch. Add the apple slices and toss them until they're evenly coated with the spiced mixture.
  4. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Remove the dough from the refrigerator and roll it out on a lightly floured surface into a rough 12 inch circle.
  5. Transfer the rolled dough onto the prepared baking sheet. Arrange the apple slices evenly over half of the dough, leaving about a 2 inch border around the edges. Fold the dough over the apples and brush the exposed dough with heavy cream. Sprinkle coarse sugar on top.
  6. Bake for 35 to 40 minutes, or until the crust is golden brown and the apples are tender. Allow the galette to cool slightly before serving.

Chef’s Insight

The key to a flaky crust is cold butter and keeping the dough chilled until just before rolling it out.
