Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9 inch round cake pans. Set aside.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the butter sugar mixture, alternating with the milk, beginning and ending with the dry ingredients. Stir in the vanilla extract.
  4. Divide the batter evenly between two bowls. Add a few drops of red food coloring to one bowl and green to the other, stirring until desired colors are achieved.
  5. Pour each colored batter into its own prepared cake pan, creating a snow capped dream with layers of red and green.
  6. Bake for 25 30 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely on wire racks.
  7. In a small bowl, gently crush peppermint candies using a rolling pin or your hands. Set aside.
  8. To create the fluffy peppermint cream, fold crushed peppermint candies into thawed whipped topping until well combined.
  9. Once cakes are completely cool, place one cake layer on a serving plate. Spread a generous amount of peppermint cream on top and over the sides of the cake. Top with the second cake layer and press down gently.
  10. Frost the top and sides of the cake with more peppermint cream, creating a snow capped effect. Decorate with additional crushed peppermint candies as desired.
