  • 1. 8 oz Sliced Ham (Paleo
  • friendly) 2. 6 Large Eggs (Free
  • range) 3. 4 Green Plantains 4. 1/4 cup Coconut Oil 5. Salt & Pepper, to taste 6. Optional: Avocado, for garnish 7. Optional: Fresh Cilantro, for garnish 8. Optional: Salsa Verde, for serving

  1. Peel and slice the plantains. Heat 2 tbsp of coconut oil in a pan over medium heat, add plantain slices, season with salt and pepper, and cook until soft and golden brown on both sides. Remove from heat and set aside.
  2. In another non stick pan, fry the ham slices until crispy. Remove from pan and set aside.
  3. Fry the eggs to your preferred doneness in a separate non stick pan. Season with salt and pepper.
  4. Assemble the dishes by placing two tostones on each plate, topping them with a portion of fried ham, then adding an egg on top. For added flair, garnish with avocado slices and fresh cilantro leaves. Serve with salsa verde on the side.
