  1. In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 40 minutes, or until all water has been absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  2. Meanwhile, in a small bowl, whisk together the tahini, lemon juice, garlic, cumin, salt, and pepper to taste. Set aside.
  3. Once the rice is ready, fluff with a fork and divide evenly among six bowls.
  4. Top each bowl of rice with half of an avocado, sliced, cherry tomatoes, cucumber ribbons, and chopped cilantro. Season with additional salt and pepper if desired.
