Instructions
Combine the apple cider, red wine (if using), brown sugar, cinnamon sticks, cloves, nutmeg, orange zest, vanilla bean seeds, ginger, star anise pods, lemon slices, and orange slices in a large saucepan. Stir gently to combine.
Bring the mixture to a simmer over medium heat, then reduce the heat to low and allow it to simmer for 30 45 minutes. The longer it simmers, the more intense the flavors will become.
As the cider simmers, use a ladle to occasionally skim off any foam that forms on the surface to keep the cider clear.
Once your desired flavor intensity is reached, remove the pan from heat and allow it to cool slightly.
Strain the cider through a fine mesh sieve into a large serving pitcher or directly into individual mugs. Discard the solids or reserve them for compost.
