  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup packed fresh mint leaves
  • 1 bottle (750 ml) sparkling wine, chilled
  • Fresh mint sprigs and cranberries for garnish

Instructions

  1. In a medium saucepan, combine the cranberries, sugar, and water over medium heat. Cook until the cranberries have burst and the mixture has thickened, about 10 minutes. Stir occasionally to prevent burning. Remove from heat and let it cool completely.
  2. Once the mixture is cooled, strain it through a fine mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids. You should have about 1 cup of cranberry syrup. Chill the syrup in the refrigerator until ready to serve.
  3. In a large pitcher, combine the chilled cranberry syrup and sparkling wine. Stir gently to combine.
  4. To serve, pour the Cranberry Mint Fizz into glasses filled with ice cubes or crushed ice. Garnish each glass with a fresh mint sprig and a few cranberries on a cocktail pick.
