Milk, Dairy (Butter)

Ingredients

  • 4 lbs. russet potatoes, peeled and cut into even chunks
  • 1 head garlic, separated into cloves but unpeeled
  • 1/2 cup unsalted butter
  • 1/4 cup milk or cream
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • Salt and pepper to taste
  • Freshly grated nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Place the garlic cloves in a piece of aluminum foil, drizzle with olive oil, and season with salt and pepper. Wrap them tightly in the foil and roast in the oven for 40 45 minutes or until golden brown and tender. Allow to cool slightly.
  3. In a large pot, boil the potatoes in salted water until they are fork tender, approximately 20 25 minutes. Drain well and return them to the pot to remove excess moisture, shaking the pot gently.
  4. Add the butter, milk or cream, roasted garlic, rosemary, and thyme to the potatoes. Mash until smooth and creamy, with no lumps remaining. Season with salt, pepper, and nutmeg if using.
  5. Transfer the mashed potatoes to a serving dish and create a beautiful swirl pattern on top. Garnish with additional fresh rosemary sprigs and thyme leaves. Serve immediately while warm and comforting.

Chef’s Insight

To ensure even cooking, make sure all the potato chunks are roughly the same size.
Use a ricer or fine mesh strainer to achieve a smoother texture in the mashed potatoes.
