About This Recipe

A refreshing Greek-inspired mocktail made with honeydew melon, cucumber, fresh mint, and lime, topped with sparkling water.

Greek cuisine often emphasizes fresh vegetables and fruits, as well as herbs like mint, which are abundant in the Mediterranean climate.

Ingredients

  • 2 cup fresh honeydew melon, cubed
  • 1 cucumber, peeled, seeded and chopped
  • 4 limes, zested and juiced
  • 1/4 cup fresh mint leaves, plus more for garnish
  • 3 cup sparkling water
  • ice

Instructions

  1. 1

In a blender, combine the honeydew melon, cucumber, lime zest, and mint leaves. Blend until smooth and creamy.

  2. 2

Pass the mixture through a fine-mesh strainer into a large pitcher to remove any pulp or seeds.

  3. 3

Stir in the lime juice and sparkling water. Adjust the sweetness by adding more honeydew, if desired.

  4. 4

Fill 6 tall glasses with ice, then pour the melon mixture over the ice. Garnish each glass with a mint leaf.

Chef's Notes

For a truly indulgent experience, serve the mocktail in champagne flutes and use silver straws.

Plating Tips

Serve in tall glasses or champagne flutes. Garnish each glass with a fresh mint sprig and a thin cucumber wheel on the rim.
