About This Recipe

A Greek-inspired frozen yogurt dessert layered with lemon-mint yogurt and honey-tossed pineapple. It comes together in minutes and sets in the freezer overnight.

The Aegean Sea is a cradle of ancient Greek civilization, and this treat pays homage to its rich culture.

Ingredients

  • 2 cup Greek yogurt
  • 1/2 cup honey
  • 1 ripe pineapple, peeled and cored
  • 3 lemons, zested and juiced
  • 1 handful fresh mint leaves
  • 1 tsp vanilla extract

Instructions

    In a large bowl, combine the Greek yogurt, lemon zest, lemon juice, and vanilla extract. Stir until smooth.

    Tear or finely chop the mint leaves and fold them into the yogurt mixture.

    Peel and core the pineapple, then cut it into bite-sized pieces. Toss the pieces with the honey until evenly coated.

    Spoon the yogurt mixture into individual serving glasses or bowls. Layer the honey-coated pineapple on top.
